Raspberries are an aromatic berry, traditionally used to make jams, jams, "vitamins" (fresh berries, ground with sugar), compotes, syrups, or simply frozen. What raspberry is suitable for making wine

Important! Raspberries have a good fermenting effect, better than many berries and fruits, because of the content of wild yeast on its surface. Therefore, before you begin to wash the raspberries, stop and do not do this, wash away all the yeast. Raspberries for wine do not wash!
How to make raspberry wine at home
There are several recipes how to make raspberry wine - from fresh berries, canned, frozen, so you can make excellent raspberry wine at home using different recipes.
The result will always be the same - you get excellent natural raspberry spirits, albeit low alcohol, cooked with your own hands and without any impurities.
List of required ingredients
Raspberry homemade wine is made according to a fairly simple recipe. Wine will need berries, water and sugar. From the ingredients that's all.

You can also mix the berries together - you get the original drink every time a new shade, depending on how many berries of a particular color were used.
Proportions: 3 kg of raspberries - 2.5-3 kg of granulated sugar and 3 liters of water.
Syrup preparation
Half the mass of sugar is poured into half the water, put on the fire, heated strongly, stirring the sugar to dissolve, but do not bring to a boil. Then remove from heat and allow the syrup to cool to room temperature.
Important! The temperature of the syrup is important - if you pour too hot liquid into raspberries, the yeast will die and there will be no fermentation.
Features of fermentation of raspberry wine
The peculiarity of raspberries is that it ferments well without adding ferment and can itself serve as a starter for wine from other berries. Therefore, making wine from it - The process is quite simple.
Getting raspberry wine at home
The cooled syrup is poured into pre-crushed (crushed) raspberries. It is better to push raspberries manually without using a blender. Mash the berries can be a fork or tolkushkoy, and preferably not metal - take wood or plastic. You can leave the wine to ferment in an enamel saucepan with a tight-lined lid, but this is usually done in a large bottle (5 - 10 l), also tightly closed.
Important! The mixture should fill the capacity of not more than 2/3, and preferably at 1/2 volume.
Leave the mixture for 7-10 days in a relatively cool - + 19-20 ° C, in a dark place, at the same time it will need to be stirred or shaken 2-3 times a day (in bottles) - so as not to sour. After soaking for 7 to 10 days, the liquid needs to be poured several times from the tank into the tank to saturate with oxygen (this should be done as slowly and carefully as possible). And then prepare a new batch of syrup (from the second half of sugar and water) and add to the already fermenting mixture.
Important! HPrepare appropriately sized bottles and pans in advance, taking into account how many liters of homemade raspberry wine you expect to receive. Also, they should be of such size that it is convenient and not difficult to stir, shake, pour the wine.
After adding the second portion of the syrup to the wort, it is kept (also stirring occasionally) under the lid with a slit or water seal. For the bottle, you can use an ordinary medical glove with a pierced hole until the time (3-4 weeks) is divided into two fractions - fermented thick raspberries and clear clarified liquid. Strain the wort, squeeze well the thick and discard, and the liquid is again placed under the water seal, put into the water. The replacement of a water seal can be a rubber stopper with a hole, into which a flexible tube is inserted, which leaves the bottle in a container with water.
Important! The tube that removes gases from the bottle should always remain free and not in contact with the liquid.
So the wine is worth it until the bubbles stop appearing in the water completely, that is, until the gas production stops in the wine. After that, the wine is bottled almost to the neck and corked. Wine is ready. But while it is still young, it will fully ripen and enter into taste after 4-6 months. Store it in a cool dry place - in the refrigerator, on the veranda, in the basement (not raw). Bottles are not placed, but placed in an even row so that the liquid inside touches the edge of the cork.
Important! When a sediment appears on the bottom of the bottles, the wine must be filtered and re-clogged.
You can add strength to the wine by adding 50-60 ml of alcohol / 0.5 l of wine - this will not only fix the drink, but also become an obstacle to its further fermentation: the wine will not turn sour and will be well kept.
By the way, the recipe for a recipe for raspberry wine from frozen berries is almost the same. The proportions of the ingredients are the same, plus fermentation is added. yeast. And frozen raspberries should not only be completely thawed, but also be at room temperature - for this, it can be slightly heated on the fire.
The recipe for making raspberry wine from jam
Raspberry jam wine is as aromatic as fresh berry.
It is prepared both from good quality jam, and from sugared, also make wine and fermented jam.
What is needed for cooking
To make wine on the basis of suitable raspberry jam at home you will need 1 liter of jam and, depending on its versatility (density), 2-2.5 l of water, 40-50 g of wine or bakery yeast. Since the jam is already with sugar, its addition is not necessary, but you can add a little sugar to taste.
Did you know? In general, the more sugar is in the wine during its fermentation, the stronger the finished drink will be.
The process of making raspberry wine from jam at home
The jam is stirred with water and left for 2-2.5 days at room temperature, stirring or shaking the mixture once a day. Then filter and inject the yeast, leave it in an open container for 6-8 days and filter again. Now the container is closed with a hydraulic lock, a stopper with a tube lowered into the water, and waiting for the fermentation process to stop (up to 5 weeks). When the wine is ready - fill the bottles and store them.
If spoiled and fermented jam, then it is also a suitable option, from which in cold winters, not in season, to make wine. But the main thing is that the jam was only at the very beginning of fermentation: if it has already managed to sour and disappear, throw it away.
Wine from fermented raspberry jam is made like this: 1 liter of jam, 50 g of raisins, up to 2.5 l of water, 100-150 g of sugar. Diluted jam with water, add unwashed (!) Raisins and half a serving of sugar, mix well. Leave the wort for 8-10 days in a warm dark place in a container with a hole in the lid or bottle with a pierced glove on the neck. Then filter, add the remaining sugar, stir and leave for 4-5 weeks closed hydraulic lock. After fermentation is bottled for storage.
Important! Raisins, like fresh raspberries, do not wash - on its surface is a natural yeast fungus necessary for fermentation.
