How is sugar beet used and what is produced during processing?

We all love sweets. Candy, cakes, buns, etc. Sugar is used for all this. Already from the course of history, we remember that the Egyptians willingly grew sugar cane on the banks of the Nile.

But in the conditions of the Russian climate this is impossible. We use sugar beets for sugar extraction. But it has other beneficial properties.

It is about them about these beneficial properties and how this vegetable is used, will be discussed in this article. You will also learn how syrup, sugar and pectin are produced from beets.

Application

  1. For sugar extraction in areas of Europe, India.
  2. For livestock feed (Fresh pulp).
  3. For fertilizer.
  4. For food and alcohol production (in rare cases).
  5. In the pharmacy (beet pulp).
  6. To raise the immunity and increase hemoglobin, the general strengthening of the body.
  7. To obtain solvents.
Attention! People with diabetes, this type of beet is strictly contraindicated!

What kind of vegetable is used for rework?

  1. After arriving at the plant and cleaning it from harmful impurities, pulp, molasses and defecation lime are obtained.
  2. The tops.
  3. Ground chips.
  4. Liquid remaining after disinfection and diffusion.

Using

Use of root vegetables:

  • Actively replaces sugar, which is made from it. If you add chopped shavings of root vegetables to porridge, compote, etc. they will become more useful, and the sweet taste will not disappear.
  • Used for the production of alcohol.
  • Root can be eaten raw, picked from the garden and washed.
  • Molasses is used for bakery products, the production of ethyl alcohol.
  • Fertilizer.

Use of topper:

  1. Dried, they are processed into flour or into granules, which are then sent to feed livestock.
  2. After harvesting, the tops can be given in a "raw", still green form.
  3. Due to the high content of protein and proteins, it is good for humans to use beet tops. But it is better to use molasses for these purposes, because it is a more edible product and is better absorbed by the digestive tract.
  4. Fertilizer.

Sugar beet sugar production and main products

Main products:

  • Sugar.
  • Syrup containing 50% sugar.

Waste:

  1. Zhom - beet chips, the sugar content of which is not more than 1-5%. It is used for feeding livestock, in pharmacology and the food industry.
  2. Molasses (molasses) - Another waste product of sugar production. Used for the production of food acids, ethyl alcohol yeast. Also, molasses is sometimes added to animal feed, as It is extremely high in calories.
  3. Defecation or defecation lime - lime fertilizer. Farmers love it because of one useful property. Thanks to him, the sugar content in sugar beet increases, and the yield of some crops increases.

Production

Syrup

Production at the plants:

  • Chips of rhizomes are processed in a diffuse plant, resulting in a diffuse juice.
  • It is cleaned using calcium hydroxide, sulfur oxide and carbon dioxide.
  • Juice is purified, heated and enters the vacuum apparatus.
  • Boil down to obtain a sugar content of 55% and 7-8% of water.
  • Pass through centrifuges, receiving sugar content in 50%.
  • So it turns out the syrup, which after dried and get sugar.

House production:

Better that the chips do not touch the bottom of the pan, otherwise the syrup will turn out with a bitter aftertaste.

  1. Rub the rhizome on the grater, put in an aluminum pan. (But some people prefer to cook the syrup in a pressure cooker, considering that in this way the quality of the products will be higher).
  2. 10 kg. Chips 1-2 liters of boiling water.
  3. Cook for one hour on moderate heat, stirring continuously.
  4. After the contents of the pan cool and press together with the liquid.
  5. This product is again poured boiling water in the ratio of 2: 1, stirred and placed in the oven for 40 minutes.
  6. Squeeze the juice.
  7. We filter through several layers of cloth and boil on low heat for evaporation, stirring all the time.
  8. Ready syrup pour into glass jars and roll up tightly.
  9. For long-term storage (from 8-9 weeks) put the syrup in a cool place, preferably in the cellar. Or you can pasteurize the syrup at a temperature of about 90 ° C.
What would syrup after not candied 1 kg. syrup add 1 g of citric acid.

Details about the production of sugar from sugar beets, including at home, we told here.

Sugar

  • The resulting syrup (see "Syrup. Production at the plants") is again driven off in a centrifuge and washed, obtaining crystals.
  • After dried, cleaned and packaged.

Pectin

  1. The root crop is cleaned, dried, separated pulp and extract.
  2. The extract is concentrated and pectin is extracted from it with ethyl alcohol.
  3. Pectin is dried.
  4. The pulp is washed with catholyte, and the resulting liquid is mixed with the extract.
  5. The finished product is dried.
Sugar beet has a rather complicated and long cultivation technology, in contrast to the same sugar cane. How to achieve a good harvest and large root crops - read on our website.

Sugar beets are a useful product that once saved the peasants from starvation during the years of crop failure., and now being the main source of sugar in Russia (for details on where sugar beet grows, what kind of climate and soil "loves", read here) But its benefits do not end there. Rhizome is used for treatment, baking bread, cooking alcohol. Plant and pulp are very much loved by cattle. But it is not necessary to run and buy this product in the store, because you can grow it yourself.
